Splenda Oatmeal-Raisin Cookies
From "The Splenda World of Sweetness":
Nonstick cooking spray for the baking sheets
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup (2 sticks) unsalted butter at room temperature
1 cup Splenda Sugar Blend
2 large eggs, at room temperature
1 tablespoon unsulfured molasses
1 1/2 teaspoons vanilla extract
3 cups old-fashioned rolled oats
1 cup raisins
Position racks in the center and upper third of the oven and preheat to 350 degrees F. Lightly spray 2 baking sheets with the cooking spray.
Sift together the flour, baking soda, and cinnamon into a bowl. (I stirred them together as my flour was pre-sifted.) Beat the butter and Splenda Sugar Blend in a large bowl with an electric mixer until light and fluffy, about 3 minutes. One at a time, beat in the eggs, mixing well after each addition. Beat in the molasses and vanilla. On low speed, gradually beat in the flour mixture. Stir in the oats and raisins. Drop rounded tablespoons of the dough, 1 inch apart, onto the prepared baking sheets.
Bake until the cookies are lightly browned, 10 to 12 minutes.
Let cool briefly on the baking sheets, then transfer the cookies to wire racks and let cool completely. Store the cookies at room temperature in an airtight container.

I've been on an oatmeal cookie kick this week, and the result of all that cookie-making is my original recipe for not-so-sweet, healthful oatmeal raisin cookies. These are not the cookies to make when you want to impress your friends or make a decadent dessert--they're the cookies you give to your toddler and pretend they're real cookies, or the ones you make when you want to eat oatmeal cookies for lunch for the third day in a row.
Keri Beth's Good Enough Oatmeal Cookies
Makes 2 dozen
1 cup white wholewheat flour
2 cups oats
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 Tbsp cinnamon
1/4 cup sugar
1/4 cup applesauce
1/4 cup mild oil
2 Tbsp molasses
2 tsp vanilla
1/2 cup raisins
Mix the dry ingredients. Mix the wet ingredients and combine with dry. Stir in the raisins. Put it all in the fridge for 15 minutes while the oven preheats to 350 and you grease a couple cookie sheets. Scoop onto cookie sheets and flatten slightly, then bake for 15 minutes. Dunk them in milk and they almost taste like real cookies.
